With roots in Danish tradition and a California mindset, Oat Bakery blends timeless techniques with a fresh, local approach to community-centered baking.

How it
started

Oat Bakery began the way many good things do—at home, shared with people you love, and with the idea that bread should be simple, beautiful, clean, and nourishing—all at once. When I moved to Santa Barbara from Copenhagen in 2016, I brought a little piece of home: my mom’s beloved bread recipe. A recipe born from a desire to eat better, feel better, and live better. What started in our home kitchen—baking for friends and neighbors—quickly became something more. Pop-ups turned into lines down the street, selling out loaf after loaf, until the little dream grew into something bigger. In 2017, we opened the doors to our first brick-and-mortar bakery. Oat Bakery was born—a place where health, family, creative expression, and community could live side by side.

What started as a home kitchen operation and pop-up bakery quickly took off into a small brick-and-mortar, officially opening in 2017. Shortly after moving here from Copenhagen in 2016 Louise began baking her moms (Else) bread recipe for friends and family and soon after, popping up around town, selling out religiously. Oat Bakery was born — a resounding tribute to love, family tradition, community, and expression. Inspiration

The heart of our bread goes back to my mom in Copenhagen—a marathon runner and athlete in the ’90s who was always searching for better fuel for her body. She didn’t want something sugary or processed. She wanted something real. So she created a bread packed with organic seeds, grains, vegetables, and healthy fats—bread that was a meal in itself, nourishing and sustaining. Our bread is always fresh, hot out of the oven at 8am and shaped by hand in small batches. All of our bakeries are open kitchens so you can often see the process: from mixing and shaping to pulling warm loaves straight from the oven. We never set out to be just another bakery. We set out to be part of the neighborhood—a place to gather, to learn, and to make healthier choices that feel good and accessible.

The inspiration and passion for baking goes back to Louise’s mom in Copenhagen. She was a professional athlete and marathon runner in her 20s and 30s and came up with a recipe for herself to fit her needs. She created a bread that was filled with seeds, vegetables, organic grains and healthy fats. The bread has become famous among friends and family and it’s that recipe that inspired them to open a bakery, different from others and with creativity, quality and health in focus. “Our bread is all organic and handmade and baked in small batches. We bake all of our bread in daylight, that way our employees are happy and well rested. In this light, breads are always fresh and our customers get to be a part of our bread making process: from making the doughs, shaping and coming fresh out of the oven. We want to share our knowledge and passion with anyone and everyone who walks through our bakery doors. We don’t just want to be another bakery.. we want to be a part of the community, an experience and a healthier choice”

Our vision

From the very first loaf, our vision has been clear: to offer bread that feels good in every sense. As more people lean into mindful eating and wellness, we stay rooted in what we’ve always believed—good food should nourish, delight, and bring people together. Everything we make is organic, thoughtful, and full of intention. Over the years, we’ve watched our little bakery grow—watched familiar faces become part of our extended family. And through it all, we’ve stayed true to what matters: real ingredients, real people, and real connection.
